I did one week of pancakes and one week of waffles as suggested. Now I feel like I only have two weeks of counter mother left and several recipes to try or even try more than once. If I want to do that do I have to keep starting new mothers? Is there a mature mother version of the beginner recipes? Is there a way to keep my mother on the counter indefinitely?

Hi Elisabeth,
Are you following the instructions for your Counter Mother on p. 28? In the last paragraph on that page, it instructs you to transfer your entire mother to a Pyrex, wash and dry the bowl you were keeping your mother in, remove 1/2 cup of your mother from the bowl you transferred it to, and add it to your freshly washed bowl. This is your new mother, and it can be kept as a Counter Mother indefinitely if you like (each week, you will follow the same process outlined in the last paragraph on p. 28), and used to make recipes in the Beginner Breads and Quick & Easy Sourdough-Enhanced Treats Sections.

Or, if you like, once your mother is mature and giving rise to breads, it can be converted to a Refrigerator Mother (instructions for this are on pages 58–59) and used for recipes in the Advanced Breads Section.
