Hi From Talent OR. I keep my home cool around 65 in winter but my oven has a bread proof that stays at 97 - is that too high for wild yeasts? I do have an upstairs office that can stay 70 and warmer. Trying not to buy expensive machine for countertop. Thanks!

Hi Charlotte,
Probably 65 is too cold. The oven may be good for bake day proofing - not for the whole week. I think the office solution is good, try setting the temperature for 72.

Hi Charlotte, 65 degrees will be a bit too cold for your mother. If you're able to keep it in your upstairs office where it's at least 70 degrees, that is preferable.

I have the same concern as Charlotte. I live in Gig Harbor and our main floor where the kitchen is stays around 60 to 65 almost year round, but we do have a loft with a wet bar that is warmer.
Does the mother have to be on the counter or can it be in a proofer?

Your mother can absolutely be kept in a proofer, especially if you're concerned about cooler room temperatures.
