I made english muffins while I was nurturing my "counter mother" and loved them. I would like to make more but now I have a "refrigerator mother." How can I do that? Thanks!

Yes, you can make English Muffins using your Refrigerator Mother, as well as other breads in the Beginner Breads Section. To do this, you'll add the same volume of flour and water added to a Counter Mother throughout the week, but instead of feeding your mother small meals all week, all flour and water will be added the night before and morning of Bake Day.

  • To do this, the night before Bake Day, remove 1/2 cup of Refrigerator Mother, add it to your Glasslock bowl, and add 3 cups flour and 2 cups water. Then, cover it with a flour-sack cotton towel as usual.
    *Feed Refrigerator Mother left in your Pyrex loaf pan as usual, cover, and put back in the fridge until next week.


  • The next morning, feed the mother in your Glasslock bowl 1 1/2 cups flour and 1 cup of water. Wait roughly 2 hours, and then proceed with the desired recipe.

When I make Beginner Breads this way, I like to use a stand mixer since the flour hasn't sat and been digested and broken down like it has been in a Counter Mother. As a result, it's tough to mix using a spatula. However, the wild yeasts typically have a little more strength and as a result, breads may rise a little faster.
